Waffle Wednesday Wonder Presents Today's Recipe

Lemon Ice Cream Recipe
Serves 10 to 12

INGREDIENTS

-1 tablespoon freshly grated lemon zest
-1/2 cup fresh lemon juice
-1 cup sugar
-3 large eggs
-2 cups half-and-half
-1/2 teaspoon vanilla

METHOD

In a saucepan whisk together the zest, the lemon juice, the sugar, and the eggs, whisk in 1 cup of the half-and-half and the vanilla, and cook the mixture over moderately high heat, whisking constantly, until it just comes to a simmer. Strain the custard through a fine sieve into a bowl, pressing hard on the zest, and chill it, covered with plastic wrap, until it is cold. Whisk in the remaining 1 cup half-and-half and freeze the mixture in an ice-cream freezer according to the manufacturer's instructions. Makes about 1 quart.

A Green Movement: A Short History of KIWI.

The Kiwi originating in China was first called yang tao, or "strawberry peach", since then the name has been changed by Europeans as the Chinese gooseberry. Then "in 1962, New Zealand growers began calling it "kiwifruit" to give it more market appeal". The kiwi's scientific name is "Actinidia deliciosa" (Encarta). Kiwi's are grown on vines, vines which as very sensitive to warm and cold spells. These spells can reduce flowering, kill fruits, and even the entire kill plant. Kiwi vines are so sensitive they have been unsuccessful in growing them in certain areas of the world. The kiwi is most often used as a source of food. Kiwi is most often eaten fresh, but can also be used in flavoring, desserts, or beverages.

The kiwi vines are now grown on trellises and new ways of wrapping and trimming the vines are being discovered to produce more fruit. "New Zealand supplies 99% of the world production of kiwifruit". Most of the kiwi produced in New Zealand is consumed by Germany. Kiwi vines grow up to 30 feet long with a fruiting lifespan at the mature age of one year until the age of about three when fruiting slows unless proper measures are taken.

Mora Monday Moment Presents Today's Recipe

Caramelized Grapefruit Salad Recipe
Serves 4 to 5

INGREDIENTS

-1/3 cup pecan halves
-2 tablespoons plus 1/4 cup sugar, divided
-1 medium grapefruit, peeled and cut into segments
-4 cups spring mix salad greens
-3/4 cup chopped cucumber
-2 green onions, sliced
-1/2 medium ripe avocado, peeled and cubed
-2 bacon strips, cooked and crumbled
-3 tablespoons reduced-fat honey mustard salad dressing
-1/4 teaspoon coarsely ground pepper

METHOD

1.-In a small nonstick skillet over medium heat, cook and stir pecans and 2 tablespoons sugar for 2-4 minutes or until sugar is melted. Spread on foil to cool.
2.-Coat grapefruit segments with remaining sugar. Coat the same skillet with cooking spray; cook grapefruit over medium heat for 2-3 minutes on each side or until browned.
3.-In a large bowl, combine the salad greens, cucumber, onions, avocado and bacon. Drizzle with salad dressing and toss to coat.
4.-Divide salad among four serving plates. Top with grapefruit and pecans; sprinkle with pepper.

Fondue Friday Farm Presents Today's Recipe

Orange Flan
Serves 6 individual servings

INGREDIENTS

-1/2 cup sugar for caramelized sauce
-1/2 cup orange juice for sauce
-2 cups half-and-half (or heavy cream for a richer, denser custard)
-zest of 1/2 Large Orange
-zest of 1/2 Lemon
-1/2 cup orange juice for custard
-3 eggs
-1/4 cup sugar for custard

METHOD

Put a saucepan over medium heat for 30 seconds. Add 1/2 cup sugar and 1/2 cup orange juice.

With the wooden spoon, keep stirring sugar and juice mixture constantly in pan until sauce is reduced and thickened. It should be a rich medium brown color (caramelized). This will take 3-5 minutes or so on medium to low heat.

Remove from heat and quickly spoon caramelized sugar sauce into each of the 6 ramekins or large dish. (If you wait, sugar will cool and harden.) Set aside.

Grate peel of half of a large orange and half of a lemon into a mixing bowl.

Pour about 1/2-inch of warm water into a 9” x 13” baking dish for boiling water bath if using ramekins. If using one large open baking dish, be sure that the dish is tall enough to accommodate the water necessary to cover 3/4 or the height of the dish.

Add 1/2 cup orange juice, the half-and-half and citrus zest to a heavy-bottomed saucepan and stir. Scald 2 cups of half-and-half in the saucepan and remove from heat. Keep a close eye on the pan, so the cream does not boil over.

Meanwhile in a medium mixing bowl, beat slightly 3 eggs. Mix in 1/4 cup sugar.

Stirring constantly, gradually add hot cream to egg yolk mixture. Stir until the sugar is dissolved. Pour the mixture slowly into another mixing bowl, straining it using the cheesecloth to line the strainer. This should catch all the citrus zest. Discard cheesecloth.

Ladle mixture into ramekins.

Place each of the ramekins in the baking dish with water. If water level does not reach 3/4 of the way up the sides of the ramekins, carefully pour more water in. Bake uncovered in water bath at 325 degrees for 50-60 minutes, or until a knife comes out clean when inserted half way between center and the edge of dish.

Cool and Refrigerate

Carefully remove each ramekin from the water bath. Set on a cooling rack until lukewarm, then chill flan thoroughly in refrigerator - at least 1 hour.

A Green Movement: A Short History of BOK CHOY.

An archaeological excavation of an ancient Chinese village found bok choy seeds that were more than 6,000 years old. The ancient Chinese often praised the vegetable through poetry and other writing. They considered it an extremely delicious, flavorful and nutritious vegetable. In modern China, the vegetable is believed to have many medicinal qualities, including battling fever, inflammation, infections and sore throat.

After being grown for centuries in China, bok choy made its way to Europe in the 18th or 19th century where it began to be eaten and planted by the Europeans.

Today bok choy is also grown in the United States and Canada. The vegetable is most commonly grown in Alberta, Canada and in California. Bok choy is available year-round in America. It only recently became popular in America and is still most commonly found at ethnic market and grocery stores.

Waffle Wednesday Wonder Presents Today's Recipe

Strawberry Ice Cream Recipe
Serves 13 to 14

INGREDIENTS

-3 cups fresh ripe strawberries, stemmed and sliced
-4 tablespoons freshly squeezed lemon juice
-1-1/2 cup sugar, divided
-1-1/4 cups whole milk
-2-3/4 cups heavy cream
-1-1/2 teaspoons pure vanilla extract

METHOD

In a small bowl, combine the strawberries with the lemon juice and 1/2 cup of the sugar. Stir gently and allow the strawberries to macerate in the juices for 2 hours. Strain the berries, reserving juices. Mash or pure half the berries. In a medium mixing bowl, use a hand mixer on low speed to combine the milk and remaining granulated sugar until the sugar is dissolved, about 1 to 2 minutes. Stir in the heavy cream, reserved strawberry juice, mashed strawberries, and vanilla. Turn the machine on; pour the mixture into freezer bowl, and let mix until thickened, about 20 to 25 minutes. Five minutes before mixing is completed, add the reserved sliced strawberries and let mix in completely. The ice cream will have a soft, creamy texture. If a firmer consistency is desired, transfer the ice cream to an airtight container and place in freezer for about 2 hours. Remove from freezer about 15 minutes before serving.

A Green Movement: A Short History of RADISHES.

The descriptive Greek name of the genus Raphanus means “quickly appearing” and refers to the rapid germination of these plants. Raphanistrum from the same Greek root is an old name once used for this genus. The common name “radish” is derived from Latin (Radix = root).

Although the radish was a well-established crop in Hellenistic and Roman times, which leads to the assumption that it was brought into cultivation at an earlier time, Zohary and Hopf note that “there are almost no archeological records available” to help determine its earlier history and domestication. Wild forms of the radish and its relatives the mustards and turnip can be found over west Asia and Europe, suggesting that their domestication took place somewhere in that area. However Zohary and Hopf conclude, “Suggestions as to the origins of these plants are necessarily based on linguistic considerations.”

Radishes, onions and garlic were paid as ‘wages’ to the Ancient Egyptian labourers who built the Pyramids. The Greeks and Romans preferred their radishes big: up to 100lbs each, grown for winter storage and served with honey and vinegar.

Raspberry Lemonade
Serves 8 to 10

INGREDIENTS

-1 (12 fluid ounce) can frozen raspberry lemonade concentrate
-3 cups water
-3/4 teaspoon lime juice
-1 (12 fluid ounce) can or bottle lemon-lime flavored carbonated beverage
-1 cup crushed ice
-1 cup fresh raspberries, garnish

METHOD

In a large punch bowl, combine raspberry lemonade concentrate, water and lime juice. Stir in lemon-lime soda and crushed ice. Garnish each glass with a fresh raspberry and a mint leaf. Serve and enjoy.

Then, invite three friends to your house. When they arrive, tell them that you hid Easter eggs with 5 dollars inside in your backyard. When they look for them, put the eggs in the door, so when they return, they see them. But, surprise! There are chocolates inside them.
-Hard-Core: Read and do the same as in the committed way of celebration. But in hard-core, you must invite 15 people to your house.

Fondue Friday Farm Presents Today's Recipe

Grapefruit and Blueberry Salad Recipe
Serves 4

INGREDIENTS

-2-3 large red grapefruits, sectioned and cut into chunks
-1 lb fresh blueberries
-2 tbsp fresh mint, chopped
-1 tsp sugar
-Feta cheese (optional)

METHOD

Over a big bowl, section and and then cut the grapefruit slices into chunks, allowing any liquid to drip into the bowl.  Add blueberries and mint to the bowl.  Squeeze any remaining juice from leftover grapefruit pieces over the salad.  Sprinkle with sugar, toss, and serve in a bowl with feta on top.

A Green Movement: A Short History of LETTUCE

One of the oldest known vegetables, lettuce is a member of the daisy and thistle family and became known as a water plant for its refreshing properties.

It dates back to the Ancient Greeks who believed it contained sleep inducing properties and so served it at the end of a meal. However, the dictatorial Emperor Domitian (81-96AD) brought it out at the beginning of his feasts so he could torture his guests by forcing them to stay awake in his presence!

The popularity of lettuce continued into Roman times, with people benefiting from its nutritional properties – in fact Emperor Caesar Augustus built a statue praising lettuce as he believed eating it had cured him of an illness! It was traditional for Romans to begin their banquets with lettuce to enhance the appetite and relax the alimentary canal.

Originating from the Mediterranean area, lettuce was first introduced into America by Christopher Columbus when he sailed ‘the ocean blue’ in 1492.

Orange Cake Recipe
Serves 4 to 6
Easy Moroccan Orange Cake Recipe - Meskouta with Orange Juice
INGREDIENTS

-4 eggs
-1 1/2 cups sugar
-1/2 cup vegetable oil
-2 cups flour
-4 teaspoons baking powder
-1/2 teaspoon salt
-1/2 cup fresh orange juice
-zest from 1 or 2 oranges
-1 teaspoon vanilla

METHOD

1.-Preheat your oven to 350° F (180° C). Grease and flour a tube pan. If using fresh oranges, zest and juice them.
2.-With an electric mixer or by hand, beat together the eggs and sugar until thick. Gradually beat in the oil.
3.-Stir in the flour, baking powder and salt, and then the orange juice. Beat until smooth, and then mix in the zest and vanilla.
4.-Pour the batter into your prepared pan, and bake for about 40 minutes, or until the cake tests done.
5.-Allow the cake to cool in the pan for 7 to 10 minutes, then turn out onto a rack to finish cooling.

A Green Movement: A Short History of GREEN GARLIC

Allium sativum, commonly known as garlic, is a species in the onion genus, Allium.
Its close relatives include the onion, shallot, leek, chive, and rakkyo. With a history of human use of over 7,000 years, garlic is native to central Asia, and has long been a staple in the Mediterranean region, as well as a frequent seasoning in Asia, Africa, and Europe. It was known to Ancient Egyptians, and has been used for both culinary and medicinal purposes.

According to Zohary and Hopf, “A difficulty in the identification of its wild progenitor is the sterility of the cultivars", though it is thought to be descended from the species Allium longicuspis, which grows wild in central and southwestern Asia.

Garlic is easy to grow and can be grown year-round in mild climates. While sexual propagation of garlic is indeed possible, nearly all of the garlic in cultivation is propagated asexually, by planting individual cloves in the ground.
